در آشپزخانه / In the Kitchen is a book on the cooking / eating / foraging and farming habits in the mountainous north-central and northeastern regions of Iran. A lot of these pictures were taken on the edge of the desert— the line where forest meets the sand.
While on this trip, Many of the locals I met along the way generously invited me into their kitchens and allowed me to document them cooking. While cooking we talked about local plants, habits in preservation and protection, and the foraging practices in the vicinity. In this region sheep’s milk reigns as sustenance, medicine, spice and sweet. There were plants consumed that I’d never seen or heard of, which through research I discovered serve a specific vitamin source for the locals beyond its flavour.
Alongside the photos, I’ve included some local recipes / local takes on more well known recipes, not really with the hopes of creating a cookbook, rather a documentation of what was made.
